Djerbian Seafood Rice Recipe

For 4 people:

  • 500 g long-grain rice (preferably basmati)
  • 500 g lamb or chicken, cut into pieces
  • 2 medium onions, finely chopped
  • 4 garlic cloves, minced
  • 2 ripe tomatoes, grated or chopped
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced (optional, for color)
  • 100 g fresh or frozen peas
  • 100 g carrots, diced
  • 1 bunch fresh parsley, chopped
  • 1 bunch fresh coriander, chopped
  • Spices:
    • 1 tsp turmeric
    • 1 tsp ground coriander
    • ½ tsp ground cumin
    • ½ tsp ground black pepper
    • ¼ tsp cayenne pepper (optional, for heat)
    • Salt, to taste
  • Olive oil
  • Water or chicken broth (about 750 ml to 1 liter)
  • A few fresh green chilies (optional, for decoration and flavor)
  • A few black olives (optional, for decoration)
